Madras is defined by dark red sauce. This colour is gained by adding chilli and turmeric. Tomato taste is typical for this sauce. Added sour taste is caused by using a tamarind or vinegar. Spices used in baked form are dried chilli, coriander seeds, aniseed, caraway and cinnamon. This curry is hot and very spicy.
